Vegan Taco Cups

I saw a recipe for these great little taco cups on Pinterest and thought they could easily be veganized! These would be awesome for a party or to bring to a pot luck!


What you will need:
1 pkg wonton wrappers
1 pkg meatless crumbles, taco flavor
Muffin pan & non stick spray
Your favorite taco toppings: vegan cheese, chopped onions, salsa, avocado, cilantro, etc.


1. Preheat oven to 350°. Lightly coat muffin pan with non-stick spray. Press 1 wonton wrapper into each spot forming little cups

2. Heat crumbles in pan (or microwave) until warm and scoop a couple spoonfuls into each cup and sprinkle with vegan cheese.


3. Bake for 8 minutes or until cups start to brown on the edges. Remove from oven, let cool for a minute and then top with whatever toppings you fancy.

Quick & Easy Nachos

I came home from work on my lunch break yesterday and I was STARVING, so I took a quick inventory of what I had on hand and whipped up this super easy dish! I'm not going to put measurements on these because you can make as little or as much as you want.


What you will need:
Tortilla chips
Vegan Cheese
Black Beans
Salsa
Avocado

1. Preheat oven to 375° and line a baking sheet with foil.

2. Spread out your chips and sprinkle with vegan cheese and black beans (I use Trader Joe's Cuban black bean because they have chilies and onions in them and are the bomb!). Bake in oven for about 10 minutes, keep your eyes on it so your chips don't burn.


3. Once cheese is melty, remove from oven, sprinkle with salsa and layer on sliced avocado.


4. Stuff your face with this incredibly delicious meal.

Vegan Jello Shots

Sorry it took me awhile to get this to you...it's been a crazy week, but as promised here is my recipe for vegan jello shots! They were quite popular at the party I threw last weekend and super easy to make.

What you will need:
1 1/4 cup cranberry juice
1 tbsp lime juice
1 1/8 tsp agar agar powder
1 cup vodka
1/4 cup Grand Marnier (or any other orange liqueur)

1. In a medium sauce pan, heat half of the cranberry juice and agar agar powder on low heat until it starts to simmer, stirring constantly to make sure agar is fully dissolved.

2. Remove from heat and stir in the rest of the juices and the alcohol. Continue to stir until you're positive everything is good and combined.

3. Pour into a shallow glass pan (or jello shot cups like I used) and cool in the fridge for a few hours until they are nice and jello-y.

4. Cut into squares (if using the individual cups, just throw on some ice for party guests) and ENJOY!
